Low Carb Pancakes

Now it has taken me a while to perfect this recipe and I'm sorry but i was taught to cook by my mother who NEVER measured anything for the life of her. I am going to try to work on that and start measuring but here it goes


Servings - about 2
Ingredients
  • 1 banana
  • 1 egg
  • 3 tbsp almond flour
  • 1/4 cup wheat bran (optional)
  • splash vanilla
  • cinnamon to taste
  • honey to taste
  • berries, chocolate chips any other toppings to taste 
Preheat skillet on medium heat (or what you would normally do for pancakes depends on stove). Mix all ingredients except toppings in large bowl. I add the wheat bran for texture and fiber. If you plan to leave it out I would add a tbsp or two more of almond flour. Pour batter about 1/4 - 1/3 cup circles. Add toppings. Wait for top to bubble a little bit, about 3 minutes, or until set and able to flip without making a mess. Flip. Wait for bottom to set. Eat just like that or add sugar free syrup.
