Ground Turkey and Squash

I get so bored sometimes with turkey meat. I was feeling like there was only so much you can do with it. So the other day my mom made this concoction (her and I have that in common, I don't know what I'm doing until its done) of squash rice tomatoes and it was amazing. So today I decided to tweak it a little and try to mimic it. Ended up being amazing. By the way, everything I make I always make too much of. It's impossible to just cook for one, and I've given up!




Ground Turkey and Squash

Ingredients 
  • 1/2 pound of lean ground turkey meat
  • 1/2 zucchini
  • 1/2 squash
  • 2 servings brown rice (I was in a rush so boil in a bag was used)
  • 3/4 cup low sodium vegetable stock
  • 3 tbsp olive oil
  • 3 cloves garlic
  • 1 jalapeno 
  • salt to taste
  • pepper to taste
  • ground mustard to taste
  • 1/2 c grated Parmesan cheese 
  • fresh parsley to taste
  • 1 tsp tomato paste  
Rice will probably take the longest so if you aren't using quick cooking rice time your cooking accordingly. Boil water for rice and boil rice. Brown turkey meat in oil over medium high heat until fully cooked. Slice zucchini and squash into 1/4 inch thick circles and then cut into 4's. Add zucchini, squash and vegetable stock to pan. Chop garlic,jalapeno and parsley add to pan with spices being used and tomato paste. Stir. Lower heat to medium-medium low. Cover and cook about 5-10 minutes until squash and zucchini are thoroughly cooked. Once zucchini and squash is cooked add cheese and rice and mix. Cook for another 4-5 minutes and serve.
