Healthy Breaded Chicken

I've been excited all day to post this one. Made it a few days ago and my brother and father couldn't even tell that it was 'healthy'. Hope you like=].

Breaded chicken

Ingredients
  • 4 thin chicken breast
  • 3/4 c (give or take) coconut flour
  • 1/2 c almond milk 
  • salt to taste
  • pepper to taste
  • ground mustard to taste
  • garlic powder to taste
  • 1/4 tsp liquid smoke

Pre-heat oven or pan however you would normally cook the chicken. I personally do a combination of both. I don't like to fully cook anything by frying but this does need a little crunch to it. So i bake first then put it in pan real quick to brown. Pour almond milk in shallow dish with the liquid smoke. Add all dry ingredients to another shallow dish. Dunk chicken into milk and make sure its wet then put into dry ingredient dish and cover with dry ingredients. Do this with all 4 pieces and then cook to your liking. I cooked mine in the oven at 350 degrees on convection for about 25 minutes then put them in a pan of hot olive oil to brown both sides. I put a piece of this on top of a salad of organic spring mix, cucumbers from my mothers garden and some low fat cheddar. Was amazing. Enjoy!
