French Onion Steak
Serving size - about 4
ingredients
- 4 servings of steak any type you like
- 1 large or 2 small-medium onion thinly sliced
- 2 tsp flour
- 1 cup low sodium vegetable stock
- 4-5 slices Swiss cheese
- 3 tbsp olive oil
- 4 slices of whole wheat baguette 1/3 inch thick
- 1/4 cooking sherry (or dry sherry for less sodium)
- 1 tsp chopped fresh thyme
- salt to taste
- pepper to taste
Preheat broiler to high. Cook steaks however you like them cooked. Set aside. In a large skillet add oil, onion and sherry cover and cook over medium heat until onions are tender and caramelized a bit. Sprinkle flour and mix in salt pepper and thyme. Cook a little while longer, about 5 minutes. If onion starts to burn a little remove from heat if not remove after those 5 minutes or so. Place steaks on broiler proof plates if you don't have any put in a 13x9 inch pan. Top steaks with onion mixture 1 slice of baguette and a slice of Swiss cheese. Broil until cheese is bubbling. (for crunchier texture toast bread before hand). Remove from broiler and serve.
