French Onion Steak

I hadn't eaten steak in years before i met my boyfriend. He is a steak fanatic. So one night we decided to have a date night and I sucked it up and found a recipe I felt like I could possibly enjoy. And let me tell you even with my 'healthy' substitutions this came out amazing. 

French Onion Steak

Serving size - about 4

ingredients 

  • 4 servings of steak any type you like
  • 1 large or 2 small-medium onion thinly sliced
  • 2 tsp flour 
  • 1 cup low sodium vegetable stock
  • 4-5 slices Swiss cheese
  • 3 tbsp olive oil
  • 4 slices of whole wheat baguette 1/3 inch thick
  • 1/4 cooking sherry (or dry sherry for less sodium)
  • 1 tsp chopped fresh thyme 
  • salt to taste
  • pepper to taste

Preheat broiler to high. Cook steaks however you like them cooked. Set aside. In a large skillet add oil, onion and sherry cover and cook over medium heat until onions are tender and caramelized a bit. Sprinkle flour and mix in salt pepper and thyme. Cook a little while longer, about 5 minutes. If onion starts to burn a little remove from heat if not remove after those 5 minutes or so. Place steaks on broiler proof plates if you don't have any put in a 13x9 inch pan. Top steaks with onion mixture 1 slice of baguette and a slice of Swiss cheese. Broil until cheese is bubbling. (for crunchier texture toast bread before hand). Remove from broiler and serve.
